The story
Sabero, at Zevenhuizen 6 in Leende, holds one Michelin star (2026) for its modern cuisine with Asian fusion influences. Nico and Sonja Boreas run it as a small living-room restaurant on a quiet rural road.
Nico cooks a contemporary menu built on attention to detail, balance and innovation. Seasons and international flavours set the direction, and classic techniques sit alongside modern ones. Each menu starts from one aim: getting the maximum flavour out of the ingredients. Gault&Millau rates the kitchen 17.5 (2026).
Sonja leads the service team, which looks for the best wine to go with each dish. Gault&Millau calls the service heartwarming and genuine. The wine pairing and a list of interesting bottles suit both a long dinner and a lunch.
The couple opened Boreas in Heeze in 2001, and it earned two Michelin stars before it closed. They sold it in 2018 and opened Sabero, a name that is an anagram of Boreas. In March 2023 they closed the Roermond location and moved Sabero to Leende.
