The story
Chef aan de Werf, at Mussenstraat 11 in Hilversum, runs a seasonal farm-to-table kitchen that earned a Michelin Bib Gourmand in 2026 for good quality, good value cooking. The restaurant occupies part of a 1916 pharmaceutical factory on the grounds of Hilversum's former municipal workshop.
Charly de Wijs leads the kitchen and opened the restaurant in October 2015, after more than 20 years as head chef elsewhere. He trained at Auberge La Provence in Laren and De Hoefslag in Bosch en Duin, and won the Prix Culinaire Taittinger in 2006.
The menu changes regularly and uses local, seasonal ingredients. Dishes have included smoked yellowfin tuna with quinoa and Antiboise sauce, and slow-cooked cod with chorizo, fennel and langoustine beurre blanc. The industrial character of the old factory remains, and the room feels warm and intimate.
