The story
GEM. earned two Michelin stars in 2026 for its French cuisine with Surinamese and Hindu-Indian influences, served at Kasteellaan 1 in Gemert.
Chef Soenil Bahadoer moved his whole team from De Lindehof in Nuenen to the gate building of 14th-century Castle Gemert. His style came with them: French technique, Surinamese-Hindustani spices and Dutch seasonal produce. The six-course menu follows his path from Paramaribo to Provence, with wines poured alongside.
Guests are welcomed in the vegetable garden across from the castle, with spiced tea and an amuse of mixed greens, cherry blossom, nasturtium and yuzu. One reviewed menu brought glazed turbot with bok choy, shrimp pakoras and coconut-marsala sauce. Lamb chop followed, with a medina spice sauce and garlic grown on site, plus a pita roll of braised leg of lamb based on a dish from Soenil's mother. The website also names langoustine, monkfish, spinach and a rendang among its signatures.
The interior is fully contemporary inside the old gatehouse. Lekker500 ranked GEM. tenth in its 2026 list. Sommelier Amit Singh explains each pairing, such as a Kamptal Grüner Veltliner with the turbot. There is outdoor seating, and two suites, the Donjon Tower Suite and the Garden Suite, allow an overnight stay.
