The story
Vanille, at Diepstraat 1 in Eijsden, is a Mediterranean restaurant with Italian and seasonal influences, listed in the Lekker500 Top 500 for 2026. The village restaurant sits just before the Belgian border, a short drive from Maastricht.
Owner Jules Crousen combines traditional and modern techniques, pairing regional flavours with ideas from world cuisine. He and hostess and sommelier Veronique Crousen took over the restaurant at the end of 2024 after years working in its kitchen and dining room. Gault&Millau awarded it 15.5 points in 2026.
Thursday and Sunday bring a fixed tasting menu, and Monday adds a surprise course. Recent dishes included thinly sliced hamachi with passion fruit and dashi, and asparagus with morel sauce and an egg yolk cooked at 63 degrees. Roasted langoustine and belly pork came in a Tom Kha Kai sauce, finished with green juice foam and spicy nduja oil. The meal ends with strawberry and rhubarb mousse beside a yogurt quenelle and verbena sorbet.
The dining room has a living-room feel, with an intimate atmosphere and service in Dutch or French. In good weather, guests can dine on the walled patio terrace garden. The restaurant's menu page lists a five-course Friday and Saturday menu at €79.50 and a six-course menu at €99.50, with a wine pairing at €9.50 per glass.
