The story
Mearkas, a seasonal International kitchen at Schuilenburgerweg 5 in Eastermar, cooks inside a glass greenhouse on its own grounds. Gault&Millau gave it 14 points in 2026, and the menu shifts with what the garden and local suppliers bring in.
Chef Kees Meinderts trained at Landgoed Lauswolt and De Librije before opening Mearkas with his former classmate Christiaan Steijn. The kitchen relies on classical technique and a preference for pure, robust flavours. Guests choose a four, five or six course dinner, and a fully plant-based version is available.
Lekker500 placed Mearkas at number 99 in its 2026 Top 100. Its reviewers praised a mini pizza grilled tableside on a small barbecue, topped with Jerusalem artichoke and grated Belper Knolle cheese. Other courses mentioned include lightly smoked brook trout with yellow beet and green apple, langoustine with kohlrabi and saffron bisque, and farm duck served with pumpkin and raviolo. The wine pairing is the recommended way to go.
The dining room is the greenhouse itself, with tables and chairs along the glass walls. Daylight sets the mood until dusk, after which subdued lighting takes over. From May to October, guests can also stay overnight in glamping tents furnished as hotel rooms, each with a private bathroom.
