The story
Buut is a contemporary Dutch kitchen at Kampweg 22 in Doorn, set in a former church, and it earned 12.5 points from Gault&Millau in 2026.
Matthijs Pijpers leads the kitchen, and the team rewrites the menu regularly around what local growers and suppliers bring in. Around 80% of the ingredients come from Dutch soil. The cooking relies on curing, fermenting, pickling, roasting and smoking. Recent dishes include a Zeeuwse kingfish ceviche with passion fruit and horseradish, and a knol kebab of spit-roasted celeriac with seaweed and mushroom sauce.
The building keeps its church character. A stained glass rose window sits beside a deep red ceiling of about 100 years old in the dome, and an acoustic wall panel adds a colourful note. Guests can eat on the sunny terrace, at the bar, in a lounge corner on the loft floor, or in one of the niches.
The wine list holds more than 80 European wines, and the chef's menu can be paired with wine by the glass. Buut also received 2 Radishes from We're Smart Green Guide in 2026, and the team buys from producers who work organically or regeneratively.
