The story
Kook Atelier op Oost (Den Burg) serves Scandinavian-leaning cooking from Oost 76 in Oosterend, on Texel's east coast. Gault&Millau awarded it 14 points in 2026. Joram Timmerman cooks, and his partner Valerie Jongeneel hosts.
There is no à la carte. Dinner is a surprise tasting menu built around four elements: water, earth, fire and air. The whole menu changes five times a year. Much of it comes from the restaurant's own edible garden, orchard and foraging garden, plus nearby farmers. A recent opener was an edible "oyster shell" of seaweed, filled with salty garden plants. The kitchen also cooks over open flame and in a wood-fired stone oven.
Texel lamb appears often, as roast, belly and pâté in one course. A vegetarian dish might pair pearl barley and tempeh seasoned with koji. Cheeses are Texelian and Dutch. Dessert leans on garden fruit, such as rhubarb or underripe plum ice cream. Lekker500 placed the restaurant 65th in 2026. The sommeliers pour wines, and sometimes homemade herbal infusions, to match.
The dining room was once a farm and is now bright, with floor-to-ceiling windows and a Scandinavian interior of natural materials. Lounge, kitchen and tables share one open space. The restaurant moved here from Den Burg in 2020. It is part of Hotel Op Oost, twelve suites in a Texel stolpboerderij a short walk from the Wadden Sea.
