The story
Apicius, at Van der Mijleweg 16 in Bakkum, Castricum, is a French kitchen that earned one Michelin star in 2026. Chef Thorvald de Winter cooks in the classic French tradition, and his brother Gaylord runs the room and the wine list.
Thorvald de Winter trained in classical French cooking at Hotelschool Ter Duinen in Koksijde, then worked in kitchens including Michel Bras in Laguiole and Alain Ducasse in Monte Carlo. He cooks with straightforward technique and avoids complicated preparations. Most produce comes from the region and the season, so the menu shifts with what arrives.
Reviewers keep returning to the bitterballen filled with oyster mushroom, which one critic called a classic that should never leave the menu. Turbot appears often, served with Flemish-style white asparagus or over lamb trotters with a grapefruit foam. Veal anchors the mains, from crispy sweetbreads to a braised shank with red wine jus and fried chanterelles.
The restaurant occupies a former 1920s house, with original stained-glass windows, black floor tiles and harbor paintings on the walls. Tables are dressed in white linen and spaced generously. The wine list runs to more than 300 bottles, many from small producers, and the front-of-house team walks guests through the selection.
