The story
Soigné is a modern cuisine restaurant at Kapelstraat 16 in Bussum, Netherlands, and it received a Michelin Recommended distinction for 2026. The restaurant's website now states that it is closed to reservations and that Claudia and Fabrice Patay, owners of De Goede Gooier in Blaricum, took it over on 5 January 2026.
Dennis Jong leads the kitchen as patron cuisinier, and the restaurant describes its approach as a complete dining experience built on personal attention. Maître Frank Velthuyse oversees hospitality in the dining room. The wine list was also chosen with care, with a team tasting process for each new menu.
The starters included steak tartare with a poached egg, brioche and Amsterdamse smuller, and fresh tuna served with sushi rice and wasabi mayonnaise. Mains featured pikeperch with smoked eel, sauerkraut and a creamy mustard sauce, along with Dutch duck breast, parsnip cream and king boletus. Dessert might be pineapple cooked in spiced syrup with pandan cream and coconut gel, or a cheese selection served with raisin and fig bread.
The atelier next to the restaurant has a large table for groups of 6 to 15, with an open kitchen that gives it a living-room feel. For private dining, the atelier seats up to 28 guests at separate tables, and the whole restaurant can be reserved for larger parties. The wine list stands out for its many Portuguese bottles, and open wines by the glass let guests taste widely.
