The story
Sazanka, at Ferdinand Bolstraat 333 in Amsterdam, is a teppanyaki Japanese steakhouse on the ground floor of Hotel Okura. Gault&Millau awarded it 14.5 points in 2026, and the restaurant is known for cooking every course in front of the guests.
Executive chef Kazuki Onodera leads the kitchen, and his team works the iron plate at each table. Guests choose between a classic and a seasonal menu. The chefs adapt dishes for meat, fish or vegetarian diets. Some ingredients arrive directly from Japan, and the cooks keep the seasoning deliberately light so the produce stands out.
Tuna tataki comes with shiso miso, and Canadian lobster is served with a tangy yuzu butter. The wagyu steak is paired with wasabi and lava salt, a combination Lekker500 singled out in its 2025 Top 500 guide. Dessert is a grape tart with yuzu mascarpone ice cream and a kokutou syrup made from fresh ume fruit.
The dining room is lively, and the griddle is the focus of the evening. You share a table with up to eight other guests, so privacy is limited. Hostesses in traditional kimonos welcome you, and smart casual dress is expected. Because the cooking surface is shared, the restaurant says it cannot guarantee the complete absence of allergen traces, so guests with severe allergies should raise concerns early.
