The story
Bussia is a modern Italian restaurant at Reestraat 28-32 in Amsterdam, and Gault&Millau awarded it 12 points in 2026. The kitchen sits beside its own bakery, so the restaurant and panificio share one Italian pantry.
The kitchen follows a refined Italian style where artisan technique meets modern plating. Breads, pastries and pasta are handmade, and the bakery next door supplies sourdough and focaccia. The Gault&Millau write-up describes hamachi tartare with cucumber and a Parma ham dressing, followed by hare and venison ravioli in a lightly sweet red wine sauce.
The restaurant takes its name from the Barolo vineyards in Piemonte. The list leans on Nebbiolo from that region, with bottles from across Italy filling the rest of the cellar. Gambero Rosso awarded Bussia two forks in 2022.
