The story
Ledeboer, at Wierdensestraat 2 in Almelo, is a French kitchen that earned a Michelin Recommended mention in 2026. Chef Rick Blanken runs the restaurant in the former Twentsche Bank building in the city centre, cooking French-trained dishes that focus on clean, pure flavours.
Rick Blanken works with classic techniques and sources ingredients locally where he can. Guests choose Menu Ledeboer, with three to eight courses, or Ledeboer Groen, which is fully vegetarian. Vegan dishes are possible if you mention it when booking. A sea bass ceviche on a purée base, with pumpkin ribbons, chives and lemon, shows the light, tangy style of the kitchen.
The dining room keeps its original mosaic floor and stained glass, and the old bank vault now serves as a wine cellar. Green plants hang from the high ceilings, and the open kitchen is visible from the tables. The vault also hosts private dinners for eight to twelve guests.
