The story
Bu'ul is a Mexican restaurant at Chablé Maroma, Carr. Federal Cancún - Tulum, Punta Maroma Km. 51, Playa del Carmen, and it is listed as Michelin Recommended for 2026. The kitchen builds its menu around corn, beans and chilies, the staples of Mexican cooking, and around the coast of the Yucatán Peninsula.
Carlos Navarrete is the resident chef at Bu'ul and sets the food identity for Chablé Maroma. He works under the mentorship of Jorge Vallejo, the chef behind Quintonil in Mexico City, who leads the kitchens of all Chablé Hotels restaurants. The cooking draws on traditions from central and southern Mexico, with a focus on freshness and seasonality.
Signature plates include lobster salbute with recado rojo, duck with chichilo negro and chochoyotas, mamey tart with escamoles, and creamy rice with venison longaniza. The kitchen follows Pesca con Futuro, a program that promotes responsible consumption of marine species. Guests can also choose a six-course peninsular menu with paired premium wines.
Sommelier Michael González leads the wine program, which includes vertical series the restaurant says are found nowhere else in the world. Bu'ul received a Wine Spectator Best of Award of Excellence in 2025. The cellar also hosts private tastings and can be booked for private dining.
