The story
Raíz is a contemporary Mexican restaurant at Schiller 331 in Polanco, Mexico City, and it holds a Michelin Bib Gourmand (2026) for good quality, good value cooking.
The menu draws on Mexican produce and pantry staples such as quelites, huauzontle, chintextle and escamoles. The kitchen describes its work as a search through flavors that stay in the taste memory of people raised in this part of the world. Dishes move between starters, soups and mains with the same ingredients returning in new forms.
Scallop aguachile comes with cucumber, green tomato and chiltepín pepper. Kampachi tiradito is finished with chintextle mayonnaise, sake, rice vinegar and pink pepper. The foie gras pyramid is stuffed with caramelized onion and apple, then served with demi-glace, morels and brioche. Braised and smoked short rib arrives with butter pumpkin purée and crispy corn.
Diners can book a nine-course tasting with a wine pairing or a six-course version. The restaurant received a Wine Spectator Award of Excellence in 2019. Desserts include a chocolate tamal with mousse, xoconostle, cacao nibs and meco chili ice cream, and a Parmesano flan with piloncillo honey, buñuelo and walnut crumble.
