The story
Marée is the fine dining restaurant of the Park Hotel Sonnenhof at Maréestrasse 29 in Vaduz, Liechtenstein. The kitchen cooks Mediterranean dishes with a classic German side, and Gault&Millau awarded it 16 points in 2026.
Hubertus Real leads the kitchen, which describes its food as homemade, fresh, regional and prepared with care. His parents started the hotel about 60 years ago, and the restaurant opened to day guests in 1997, after years of serving hotel guests only.
Gault&Millau singled out the fish. The skate wing is fried crisp with capers and garlic butter and served with potato purée. Sea bass, seared skin-side down, comes with carrot purée, beurre blanc, salmon roe and ginger. The Swiss salmon is gently cooked and paired with celery, kohlrabi, yuzu and a celery broth. The dessert is an orange and nut millefeuille with orange mousse and bitter orange ice cream.
