The story
Oz is a vegetarian restaurant at Obergass 2 in Schaan, Liechtenstein, and it holds one Michelin star (2026). The kitchen builds its menu around what is ready in the garden that day, so the dishes change with the season.
Executive chef Simeon Nikolov walks the garden and cooks what catches his eye, often only a few hours before it reaches the plate. Andreas Caminada directs the kitchen's approach. Meat, fish and shellfish are left out by design, and the team treats that as a creative brief rather than a restriction. Eggs and dairy from Graubünden still appear, and a vegan menu can be arranged on request.
Gault&Millau awarded Oz 16 points (2026). The reviewer singled out a chawanmushi finished with mushroom broth instead of dashi, a truffled egg-yolk bagel on the side. A summer melon, lacto-fermented and served with green tomatoes, grapes and chicory sorbet, shows how the cellar extends the garden through the colder months. Dessert follows the same logic, with a cassis and red cabbage sorbet beside pear foam and preserved pear.
Guests sit at a counter that curves around the open kitchen in a horseshoe, so each dish is assembled in view. The room seats only about twelve, which keeps the atmosphere close and conversational. Restaurant manager Sophie Thun leads the service team, and staff are happy to answer questions about the cooking.
