The story
JOHN is a modern cuisine restaurant inside the A22 Hotel at Ausekļa iela 22 in Riga. It holds one Michelin Star in the 2026 guide, awarded for high quality cooking.
Head chef Kristaps Sīlis was born and raised in Latvia and began cooking at 16. He trained through internships at Noma in Copenhagen and at Tom Aikens in London. The experience left him with an interest in molecular technique. He prefers to test his own methods rather than repeat existing recipes, and his modern kitchen is built around seasonal ingredients with a small element of surprise.
Breakfast is served under the name JOHN Breakfast, and the team treats it with the same care as dinner. The kitchen works with farm eggs, seasonal vegetables, artisanal dairy and fish, all chosen for origin and quality. Young chefs on the team keep experimenting to balance each ingredient with technique.
In 1939 the building at Ausekļa iela 22 housed US Embassy premises. A young Harvard student named John F. Kennedy stayed here while visiting Latvia, and the restaurant carries his first name.
