The story
Restaurant UOZEN is a French restaurant at 1-chome-10-69-8 Higashiosaki in Sanjō, Niigata, and it earned a Gault&Millau score of 15.5 in 2026.
The kitchen describes its starting point as chasse, pêche and nature. Cooking begins with going out into Niigata's landscape, and the aim is to waste none of the life that comes into the kitchen. The word "itadakimasu" sits at the center of this approach.
The menu relies on named local producers. Butter comes from Sado Dairy, beef and milk from Guernsey cattle at Kase Bokuyo, and soba from Uonuma Nokosha. Mountain vegetables and Niigata Wine Coast bottles complete the pantry.
UOZEN serves only a chef's course at ¥18,000, with tax and a 10% service charge added. Reservations are required, and a meal runs about two and a half to three hours. The restaurant also holds a 2026 We're Smart Green Guide listing of 1 Radish.
