The story
L'évo is a French restaurant at 100 Tanoshima, Togamura-Daikanba, in Nanto, and Gault&Millau gave it a score of 18 in 2026. The kitchen calls its cooking avant-garde local cuisine, built on ingredients from Toga and the wider Toyama region.
The vegetables grow in soil the team prepares with particular care. Deer, boar and pheasant come directly from contracted local hunters with years of experience. Staff process the meat themselves in a dedicated game wing under strict hygiene management. The chef then interprets these ingredients freely, so each plate is one you would not find elsewhere.
Every loaf is made by hand in a bakery hut beside the dining room, with the bread chosen to suit that day's menu. Plates and cutlery were created with artists and craftsmen, and the tables, lighting and even the knives are custom-made. The drinks list covers wine, local beer and sake produced for the restaurant. The 2026 We're Smart Green Guide awarded L'évo 3 Radishes.
There are 26 seats: four at the counter, three tables in the hall and two private rooms. The open kitchen supplies the soundtrack, and the windows look out on a landscape that changes with each season. Only prix fixe courses are served, at ¥31,000 per person before service charge.
