The story
Trequarti is an Italian restaurant at Piazza del Donatore 3 in Val Liona, near Sarego in the province of Vicenza. The Michelin Guide listed it as Recommended in 2026, and chef Alberto Basso leads a kitchen built on local ingredients and a light, playful modern Italian style.
Alberto Basso starts from the region's traditions and rethinks them with a touch of surprise. The menu describes a blend of older home cooking and a lighter, more inventive approach, with excellent raw ingredients as the foundation. The restaurant calls its format Fun Dining, a tasting route where each course is meant to entertain as well as impress.
The fusillone is tossed in beurre blanc, a sharp butter sauce that keeps the pasta creamy. Smoked herring caviar, made as a spherified cream, sits on top, and oyster leaf adds a clean, saline finish. The à la carte list also includes duck in tecia with Robuchon-style mashed potato, and hand-folded tortellini made with Asiago DOP and Gargati pasta from Val Liona, a local product with DE.CO. recognition.
Gambero Rosso awarded Trequarti two forks in 2022. The wine list is a point of interest, and Christian suggests dedicated pairing routes through it. Guests who want a broad overview can order the cicheti tasting menus, which are shared across the whole table and do not include dessert.
