The story
Volta del Fuenti is a contemporary restaurant in Salerno, at SS 163 Amalfitana km 47,300 in Vietri sul Mare. Chef Michele De Blasio's kitchen holds one Michelin star (2026), and the dining room is the main restaurant of the Giardini del Fuenti complex.
Michele De Blasio leads a kitchen that he describes as collective, built with a settled team rather than a single voice. The cooking leans Mediterranean and follows the seasons. The stated aim is to source from the local territory and work directly with breeders and farmers, without intermediaries.
The restaurant offers the Memorie, Origini and Riflessioni tasting menus, and an à la carte selection. Dishes reported in recent press include calamaretti with Controne beans and scarole, a classic pasta e patate alongside a modern reworking, mezzi paccheri with drowned octopus, and lamb with red turnips, shallots and pine nuts. The 50 Top Italy guide placed the restaurant at number 49 in its 2026 Grandi Ristoranti list.
The dining room has vaulted ceilings, which give the restaurant its name. At lunch, the view over the garden is the main feature of the room. The wine list is noted for its range, and the restaurant has outdoor seating and air conditioning.
