The story
Adelaide is the restaurant of Hotel Vilòn at via dell'Arancio 69 in Rome, an Italian contemporary kitchen that earned a Michelin Recommended mention in 2026. The cooking draws on Mediterranean produce and changes with the seasons.
Executive Chef Gabriele Muro cooks from the raw materials of the Mediterranean and rewrites the menu as the seasons turn. Roman classics sit on the same list as bolder experiments. Cacio e pepe and amatriciana appear beside plates built on harissa, miso and ponzu.
The guide singles out il vizietto, a sandwich of the day's fish with harissa and endive. Ajo, ojo e baccalà pairs Gragnano spaghettone with garlic, olive oil, cod and shichimi togarashi. Dessert brings oro di Procida, a whipped white chocolate ganache with lemon. Antipasti cost around 28 euro, primi 32 and secondi 42, and a five-course fish tasting menu is priced at 130 euro.
