The story
Affinatore is a steakhouse at Via Piero della Francesca 54 in Milan, and Wine Spectator gave it a Best of Award of Excellence in 2024. The menu centres on beef from selected farms around the world, with a wine list chosen to suit the cuts.
Every cut is dry aged, a process the restaurant says makes the meat very tender with a deep, intense flavour. Affinatore is one of the few Italian restaurants authorised by the Japanese KOBE consortium to sell and process Wagyu Kobe. Marbling follows the BMS scale, which runs from 1 to 12. The cattle are fed a mostly cereal diet, without animal protein, hormones or antibiotics.
The ilGolosario guide, which awarded the restaurant Corona Radiosa in 2026, names the Wagyu toast as a must-order. Other dishes it highlights include paccheri with tomato and a basil-infused spirit sauce, cooked alla lampada, and T-Bone and tomahawk steaks. For dessert, a warm gianduia tegamino comes with Bronte pistachio gelato.
A separate room is devoted to the restaurant's selection of distillates, rum and whiskey, and guests can pair them with cigars. The cellar lists labels from many countries, and the house describes its cigar lounge as exclusive. Outdoor seating is available in summer.
