The story
Ristorante San Giorgio at Viale Brigata Bisagno 69 Rosso in Genoa holds one Michelin Star (2026) for high quality cooking. The Italian kitchen leans on Ligurian tradition and a modern hand, and it is run by the Scala family.
The story begins in the 1980s, when Giorgio and Teresa opened a restaurant in Albisola Superiore. Teresa's cooking and her insistence on good ingredients made it a local reference point. Today the Scala family runs four restaurants in Genoa, and the house philosophy is stated plainly: the guest should never have to ask for anything.
The seasonal menu, signed by chef Alessandro Marino, starts with dishes such as cuttlefish with almond, white apricot and Beluga caviar, or raw prawns with beet greens and green olives. Pasta runs from Perle di Genova with pesto to lobster ravioli with myrtle and bitter wild herbs. Mains include stuffed squid with prebuggiùn and walnuts, pigeon in a crust with seaweed and langoustine, and lamb with asparagus and saffron. Fresh pasta, bread, focaccia and breadsticks are all made in house.
Two surprise tasting paths are offered: "Nelle tue mani" in five courses and "Seguimi" in seven. Desserts include a chocolate soufflé with black garlic ice cream and cherry, and tonka bean namelaka with pine nut and basil. Vegetarian, vegan and gluten-free dishes are available on request. The restaurant also appears in the Wine Spectator Best of Award of Excellence list (2021), and the site has a section devoted to its wines.
