The story
ConTatto is an Italian restaurant at via Gioberti 11 in Frascati, where chef Luca Ludovici cooks a modern Italian menu built around a natural cave beneath the dining room. The restaurant earned a Michelin Recommended distinction in 2026.
Ludovici matures and stores his ingredients in the cave, which stays between 12 and 15 degrees with constant humidity. He calls the approach "sub-zero kilometre," sourcing from the immediate area and aiming for near-zero waste. Recent plates include small gnocchi with seasonal herbs, candied lemon and cave-aged marzolina, and cuttlefish cooked two ways with Swiss chard and black ink mayonnaise.
The dining rooms are minimal and host temporary shows by young artists from Lazio, which change with the menu. The wine list of about 150 labels leans toward Italian and French producers, with German Riesling, Pinot Noir and Franciacorta among the styles. Tasting menus run five courses for 65 euros or seven for 80 euros, and parties of more than four must choose one.
