The story
Une is an Umbrian restaurant at via Fiorenzuola 37 in Capodacqua, Foligno, and it holds a Michelin star in the 2026 guide. Chef Giulio Gigli leads the kitchen with creative cooking built on produce from small local producers.
Gigli grew up helping his grandmothers Ida and Claudia in the kitchen. He rolled pasta, decorated crostate and tasted the sauce. His grandfather Franco taught him to preserve in oil and vinegar and to make jams. He later worked at Disfrutar in Barcelona, Le 1947 by Yannick Alléno, Benu in San Francisco and Il Pagliaccio in Rome.
The kitchen sets traditional Umbrian recipes beside techniques learned abroad. Dishes follow the best seasonal ingredients each day. The restaurant works with its own vegetable garden, woods and pantry, and the We're Smart Green Guide gave it 3 Radishes in 2026.
To limit waste, Une serves only tasting menus. Orto e Conserve runs seven courses at €90 per person, and Relazioni runs eight courses at €110. The Chef's Table puts guests close to the stoves for eight courses with wine pairing at €170. Lunch and dinner are both served on selected days.
