The story
Colline Ciociare is an Italian restaurant in Fiuggi at via Prenestina 27, Acuto, and it holds a Michelin star in the 2026 guide. The kitchen belongs to chef Salvatore Tassa.
The story starts in 1960, when Tassa's mother, Ester, opened the family trattoria. Salvatore was born in Bradford, England, then returned to Acuto. He studied architecture, and at 30 he entered a cooking competition, betting that a place in the top four would keep the family business going. He finished fourth. The Michelin star followed in 1995.
The starred dining room serves two tasting menus: five courses at €100 and seven at €125. A wine list is available on the restaurant's site. The same family also runs Nu Trattoria, where the chef sends out a seasonal surprise menu for €55. The Italian cooking here also earned two Radishes from the We're Smart Green Guide in 2026.
