The story
4 Ciance, at via Dronero 8/c in Cuneo, is a modern Piedmontese restaurant that the Michelin Guide lists as Recommended for 2026. It sits in the city centre and cooks regional dishes with a contemporary hand.
Chefs Gaetano and Giammaria reinterpret Piedmontese cooking in a modern style. Agnolotti come filled with three roasted meats and finished with brown jus. Veal cheek is cooked sous-vide in Nebbiolo wine and served with toasted polenta. A marinated amberjack arrives with a fennel and orange salad and toasted almonds, and the poached egg starter sits on Mornay sauce with celery, turnip and baby spinach cream.
The dining rooms are intimate, with period furnishings. Gloria oversees the hospitality in the dining room. Outdoor seating is available, and a vegetarian menu is offered at €45, the same price as the 4 Ciance menu. Average prices run about €16 for starters, €18 for first courses, €24 for mains and €10 for desserts, where the red berry cheesecake is listed among the must-try plates.
