The story
Al Cavallino Bianco serves Emilian cooking at via Sbrisi 3, Polesine Parmense, in the Cremona listing. ilGolosario awarded it the Corona Radiosa in 2026, and the Michelin Guide lists it as Recommended for the same year.
The Spigaroli brothers run the house, and Luciano and his daughter Benedetta direct the kitchen team. The family farm works alongside the restaurant, so the recipes lean on its own produce, cured meats and cattle. The setting sits on the Po, which gives the room a quiet, rural character.
Tagliolini are finished with butter from Vacche Rosse cows and topped with culatello. Aunt Emilia's lasagne comes with a white beef ragù, and frog legs are sautéed in butter and garlic in the contadina style. Dessert is a semifreddo with amaretti, savoiardi and zabaione sauce.
