The story
Arnolfo is a Country Cooking restaurant at viale della Rimembranza 24 in Colle di Val d'Elsa, Italy, and the Michelin Guide awarded it two stars for 2026, citing excellent cooking. The kitchen is led by chef Gaetano Trovato, and the menu draws on seasonal Tuscan produce.
Gaetano Trovato was born in Sicily and moved at six to Colle di Val d'Elsa with his large family. His first job was in a sourdough bakery in the old town, where bread came out of a wood-burning oven. The restaurant still bakes its own bread twice a day. He trained in France under Roger Vergé and Gaston Lenotre, then worked with Angelo Paracucchi in Sarzana before opening the current Arnolfo in 2022.
The Spring 2026 menu is organised into four tasting lines: Botanical Futures, Sea Emotions, Contemporary Classics and Gourmet Discovery. Gourmet Discovery is served only at lunch and on Sunday evenings. The Contemporary Classics line lists veal animella with zolfino beans and leek, and Chianina IGP beef with rhubarb, broad beans and caper. Tasting menus are priced at 200 euros, and guests can also choose two or three dishes à la carte.
Arnolfo's Wine Cellar offers a wine pairing for the tasting menu, priced at 160 euros and including water and coffee. Packages combine dinner with an overnight room and breakfast, and one includes a Coravin wine tasting. The kitchen also runs cooking classes where guests join the brigade for a day, with wine pairing included.
