The story
Impronta d'Acqua, at via Aurelia 2121 in Cavi di Lavagna near Chiavari, is an Italian Contemporary restaurant that holds one Michelin star (2026). The kitchen works with the coast and hinterland of the Levante Ligure, pairing sea fish with herbs and vegetables grown in the hills.
Chef Ivan Maniago builds the menu around local ingredients, with a strong focus on fish. Suppliers include La Granda for meat and cheese and Verrini for seafood. Pasta, sauces, preserves and all desserts are made in house.
The wall between dining room and kitchen was removed during a six-month renovation of a former restaurant, so guests can watch the line. The kitchen was designed by Andrea Viacava. The wine list leans toward Italian estates, particularly small artisan producers, with a selection of Champagne.
