The story
Marotta, on via Marrochelle 52 in Squille near Caserta, holds one Michelin star in 2026 for its modern cuisine. Chef Domenico Marotta cooks a seasonal, plant-driven menu rooted in Alta Campania.
Domenico Marotta trained in France, and the training shows in how he sorts nature into categories: vegetables, greens, herbs and legumes each get their own logic. The approach sounds conceptual, but it resolves on the plate. 50 Top Italy ranked the restaurant number 35 among its Grandi Ristoranti in 2026, praising his ability to draw flavor from plants.
Each menu carries three first courses: one dried pasta, one rice, one fresh pasta. The Gragnano fusilli with Lamiaceae, Caprino cheese and lime, built from ten components, is singled out by reviewers. Meat follows classic lines, with pigeon and laticauda lamb served nose to tail. Dessert combines carob, licorice, peanuts and white bean ice cream. The homemade bread arrives with Sannite olive oil.
The restaurant describes itself as "a restaurant inside a restaurant," with a reserved entrance and few places, set within Villa La Collinetta. The space is minimal and materic. Anna Coppola runs the dining room and the wine list, which draws on Italian and French bottles.
