The story
Restaurant Elephant, in the Hotel Elephant at via Rio Bianco 4 in Bressanone, runs an Austrian kitchen with a classic, traditional style and a Michelin star for 2026. The restaurant is one of the best-known tables in the town's historic hotel.
Mathias Bachmann and his brigade build the menu around local produce of the highest quality. The chef's stated view is simple: for him, quality means good raw material with an authentic taste. The dishes range widely across classic preparations, and the restaurant presents them as an expression of South Tyrolean cooking.
Guests dine in the Zirbelstube, a room panelled in stone pine, or in the Altdeutsche Stube, where warm wood shapes the atmosphere. Service includes help with pairing dishes and choosing wine, and the hotel's wine list is a central part of the meal.
