The story
IKON serves modern Hungarian cooking at Piac utca 23 in Debrecen, and Gault&Millau awarded it 14 points in 2026. The restaurant opened in 2012 and runs as a fine bistro with a relaxed, unpretentious tone.
Ádám Thür leads the kitchen, which the guide describes as technically precise without being stiff. The menu builds on local produce and seasonality, reworking traditional flavours with a lighter hand.
Hungarian classics appear under the Tradition Reborn heading, including Hortobágyi pancakes. A Josper grill prepares Debrecen's signature sausage alongside A5 Japanese Wagyu. The ramen and the venison ragout soup are among the dishes the review singles out.
