The story
Salt is a modern cuisine restaurant at Királyi Pál utca 4 in Budapest, on the ground floor of Hotel Rum, and it holds one Michelin star (2026). The kitchen works from a fixed tasting menu, so the evening follows one course sequence rather than an à la carte list.
Head chef Szilárd Tóth grew up in Mátészalka, a small town near the northeast border, and Hungarian peasant cooking traditions anchor his kitchen. He forages with his team in the Szatmár region and grows herbs in a small garden in Gödöllő. The chef says most ingredients are locally grown and organic.
The 14-course menu reads like a tour of Hungary, with dishes named for places such as Nyírmeggyes mangalitsa with Szabolcs apple and Karcag mutton stew. Greasy bread, cabbage pasta and pork trotter stew keep the meal close to home. Vegetarian and vegan versions are available if you note your preference at booking.
Guests choose from local, European or prestige classic wine pairings, plus a non-alcoholic pairing of homemade juices that includes kombucha and water kefir. The local and European pairings focus on natural and organic wines, while the prestige option is more conventional. Máté Boldizsár, sommelier and co-owner, curates the list. Gault&Millau gave the restaurant 17 points in 2026.
