The story
Waldhotel Sonnora, at Auf'm Eichelfeld 1 in Dreis near Wittlich, serves classic French cuisine on the edge of the Eifel and holds three Michelin stars (2026). The restaurant is run by Magdalena and Clemens Rambichler, who took over after the death of Helmut Thieltges.
The menu keeps the house classics, including beef tartare with imperial caviar on potato rösti and a core of Breton shellfish and Atlantic fish. Rambichler changes the plates carefully. Langoustine arrives with a light Italian touch, with crisp lettuce heart, zucchini, caper blossoms and pine nuts. A turbot slice is finished with melted lardo and N25 caviar over spinach and citrus zest.
The dining room is bright at midday and glows softly after dark. Its niches and corners give it both intimacy and a sense of being on stage. Marco Franzelin leads the wine list, which draws on about 350 bottles, with Germany and the Mosel well represented. He also finds good pairings below the top price tier.
