The story
Hardthaus, at Marktplatz 31 in Waldkraiburg, is a modern French restaurant recommended by the Michelin Guide in 2026. The kitchen works with seasonal produce from nearby markets and regional suppliers, and the menus are built around that daily supply. The restaurant sits in a protected historic building on the town's market square.
Chef Marc Vermetten leads the kitchen, which the house describes as light, modern and unconventional. Guests can order the fine dining menu, a vegetarian version of it, a smaller menu or à la carte. On request, dishes can also be prepared gluten-free or lactose-free.
The fine dining menu, priced at €85, opens with house bread and dips and moves through yellow fin tuna with miso, green apple and kimchi. Skrei cod loin comes with soy sprouts, shiitake and a green curry, while venison saddle is served with celeriac and cauliflower. Black Angus rib eye arrives with pepper foam, romanesco and young carrots. The meal ends with crêpes Suzette, Tahiti vanilla ice cream and mascarpone espuma. A wine and drinks pairing is available for €60. Because the menu changes with the market, the dishes served on a given evening may differ from the printed list.
The historic dining room dates from 1875 and is listed as a protected monument. Nostalgic wall shelves and drawers line the walls, and the terrace looks onto the market square and the church. Booking a table in the dining room also reserves a table on the terrace. A boutique hotel sits right next door, so guests can stay after dinner. The service team is young and relaxed in manner, but professional.
