The story

Intense in Wachenheim: Two-Star Japanese-French Fusion Dining on Weinstraße

Intense, at Weinstraße 31 in Wachenheim an der Weinstraße, is a fusion kitchen that draws on French, Japanese and Palatinate cooking, and it holds two Michelin stars (2026). The menu is built around fish, and the evening runs as a long, staged dinner rather than a single table service.

Cooking at the open kitchen

The dinner unfolds at the kitchen counter in around ten small and large courses over roughly four hours. Owner Benjamin Peifer and his team blend Palatinate roots with Japanese techniques, and smoke, acidity and fermentation shape the cooking. Bread, soy sauces and many other ingredients are made in house. Fish is the core of the menu, so the kitchen does not offer fish-free menus.

Dishes worth ordering for

The evening opens with small Palatinate snacks, including the Dampfnudel un Woisoß. A Hokkaido Wagyu A5 with black pepper and garlic is served to share at the table. Celery ravioli with winter truffle, hazelnut and brown butter shows the kitchen's taste for richness balanced by salt and aroma. The Bienenstich "Intense" closes the meal with vanilla, yeast, almond and honey. The menu changes with the season, so individual courses may differ on your visit.

Room and wine list

Wood, stone and an open fire set a calm, focused tone in the dining room. Service under Bettina Peifer is unobtrusive and warm. The wine list runs to around 400 selections, from well-known Palatinate wines to natural wines, and the pairings are designed to sharpen the dishes rather than overwhelm them. The restaurant also keeps a notable sake list.

Concept A culinary masterpiece unfolding across multiple spaces: In the "Guud Stubb," Palatinate appetizers are first served en miniature (legendary: "Dampfnudel un Woisoß"). In the pantry, the evening's ingredients are then presented. Finally, in the restaurant, owner Benjamin Peifer and his team blend Palatinate roots with Japanese techniques. Culinary Style Peifer’s omakase menu is both powerful and sensual. Smoke, acidity, and fermentation form the axis of his aesthetic: celery ravioli with winter truffle, hazelnut, brown butter, and parmesan combines buttery richness, salty depth, and truffle aroma. The Kagoshima Wagyu A5 captivates with its silky texture, fragrant with roast and garlic, delivering a pronounced peppery kick. The bee sting cake plays with vanilla, yeast, almond, and honey—a warm, well-rounded, nostalgic dessert. Wine 400 selections on the list—ranging from renowned Palatinate wines to distinctive natural wines. The pairings heighten the tension of the dishes without overpowering them. Atmosphere Wood, stone, open fire—the interior exudes calm and focus. Service under Bettina Peifer is unobtrusive and marked by refined warmth. Verdict Technically brilliant and emotionally profound—a pinnacle of modern Asian-inspired cuisine.
