The story
Weinstock, at Hauptstraße 12 in Volkach, holds a Michelin star (2026) for country cooking with a contemporary edge. It is the fine-dining restaurant of the Romantik Hotel Zur Schwane, and Hendrik Friedrich runs the kitchen.
Friedrich cooks under the motto "Home & Herbs", a fresh, youthful style with green accents. The nine-course menu pairs Franconian truffles with parsley, hazelnuts, leek and parsnip. Bavarian duck comes with shiso, apple, lingonberry and red cabbage, each shown in several textures. Cheese arrives as a toast of brie and lemon balm, with quince and truffle.
The hotel has its own winery, and the list is built around Franconian bottles in full range, red and sparkling included. Der Feinschmecker gave Weinstock 2.5 in 2026 and summed it up as regional roots on the plate and in the glass, presented in a contemporary manner.
The hotel has more than 600 years of history and stands between the upper and lower city gates, diagonally opposite the church. Inside, walls, ceilings and floors have been restored with care. Designer furniture and lighting sit against the old fabric. A second restaurant, Schwane 1404, shares the house.
