The story
ANIMA, at In Wöhrden 5 in Tuttlingen, is a modern French kitchen with Mediterranean touches, and it earned one Michelin star in 2026 for high quality cooking. The restaurant describes itself as casual fine dining, with a menu of five or seven courses built around the produce of the surrounding region.
Heiko Lacher has run ANIMA independently since September 2016. His earlier posts include Restaurant Zirbelstube, Villa Hammerschmiede, Waldhotel Sonnora and Restaurant Opus V. He treats local sourcing as a guiding principle rather than a strict rule, so he also buys outside the region when a product calls for it. Mulard duck comes from the organic breeder Odefey near Uelzen.
Salmon trout is raised about 20 kilometres away in Eigeltingen, then confited and served with whey dashi. Glazed sweetbread arrives with verjus and champagne herb. Kaiser grenadier is paired with a tangy kaffir lime and a concentrated emulsion made from crab heads. The kitchen's menus lean on clean flavours and precise technique, with little that is decorative.
The dining room uses beige and warm brown tones, which keep the mood calm and welcoming. In summer, large window fronts let in plenty of daylight. The wine list focuses on France and southwestern Germany.
