The story
Adler Stuben is the restaurant of Parkhotel Adler, at Adlerplatz 3, 79856 Hinterzarten, in Titisee-Neustadt. The kitchen works in Badische and European cooking, and the Michelin Guide lists the restaurant as Recommended for 2026. The Schlemmer Atlas gives it 2.5 Kochlöffel for the same year.
Meat, fish, vegetables, fruit and dairy come from regional suppliers who focus on sustainability and quality. Game is sourced from hunters in the Naturpark Südschwarzwald. Where a product is hard to find locally, particularly certain meats, the kitchen turns to international producers. Herbs for seasoning come from the hotel's own beds.
Alexander Kolodziej leads the kitchen, which he has run alongside Küchendirektor Bernhard König, a certified spice sommelier. Kolodziej has cooked since he was fifteen and trained in international luxury hotels.
Hotel guests on a dinner package choose from three set menus or build a four-course dinner from the à la carte card. Vegetarian guests get dishes built around the garden's produce and fish courses that rely on spices. The kitchen makes its sauces by traditional gourmet methods, and the veal jus alone takes twelve hours.
The dining room has a tiled stove and wooden ceilings, with a cozy, elegant feel that suits the historic house. The wine list offers 120 different wines. Across the lobby, the bar is open to non-hotel guests every evening from 18:00 to 23:00.
