The story
Falconera in Singen sits at Zum Mühlental 1 in Öhningen-Schienen, on the Schienerberg above Lake Constance. The Classic French kitchen earned one Michelin star in 2026 for high quality cooking.
Johannes Wuhrer has led the kitchen for more than 20 years, and his wife Anne runs the service and the wine list. He takes inspiration from kitchens around the world. Guests choose between a four-course and a six-course menu, and one of the two menus is vegetarian. A set lunch is also offered.
The duck liver comes on creamy polenta with glazed artichoke hearts and wine berries pickled in Moscato. Zander fillet is pan-seared and rests on lemon thyme, served with green beans and glazed pear wedges. Fonduta ravioli, filled with Italian mountain cheese, are sautéed in sage butter. The dishes change with the season.
The historic half-timbered house has white linens on the tables, set against gray natural stone walls. Two rooms share exposed stone walls and a fireplace. In summer, the garden opens for meals. Der Feinschmecker has rated the restaurant a 3 for its concept.
