The story
Hofstube Deimann is a modern French restaurant at Alte Handelsstraße 5 in Schmallenberg, inside the Hotel Deimann in the Sauerland. The Michelin Guide awarded it one star in 2026, and the kitchen cooks French classics with Sauerland produce.
Executive chef Felix Weber has led the kitchen since 2016. The restaurant describes his style as puristic and modern French, shaped by several starred kitchens in Germany. The six-course menu leans on French technique and luxurious ingredients, with regional game added where it fits.
Balfégo tuna comes with N25 caviar and braised mini artichokes. Venison loin from the Sauerland is served with pointed cabbage and blackberry, and the sauces and jus are where Weber's precision shows most clearly.
The open kitchen lets guests watch the young team plate each course. Around 450 wines sit in climate-controlled cabinets in the dining room. Sommelier Christian Soltys pours premium pairings through a Coravin system, and a non-alcoholic pairing is available. The Schlemmer Atlas gave the restaurant 3.5 Kochlöffel in 2026. Tables are generously spaced, and natural and gold tones set a relaxed but formal mood.
