The story
Die Alte Brauerei serves French and European contemporary cooking at Kaiserstraße 101 in Sankt Ingbert, and the Michelin Guide listed it as Recommended in 2026. The building dates to 1877 and began as a brewery.
Florian Dauphin joined his parents here in September 2023, after working in several starred restaurants. His French kitchen takes classic dishes and gives them a modern turn, with Belgian and Nordic influences and the occasional fermentation. Fish is his favorite material, chosen for how it was caught. He writes that the menu is put together fresh each day, with local products as a base.
The Signature menu costs 105 euros and starts with salmon trout, black radish, sour cream, watercress and kumquat. Fish of the day arrives with yuzu beurre blanc, and veal comes with a sauce of vin jaune. A five-glass wine pairing adds 50 euros. At midday there is a 45 euro lunch menu, and the à la carte lists foie gras with braised chicory and red port. Vegetarian menus are available when requested at booking.
The Schlemmer Atlas awarded 2.5 Kochlöffel in 2026 and describes a rustic, cozy room where à la carte dishes and set menus are served. Six country-style rooms are available for overnight guests. A private room called L'Orangerie hosts banquets, business dinners and family celebrations, and the restaurant also has outdoor seating and parking. Lorena Jil manages the dining room.
