The story
Dorfstube, in Reutlingen, is a Swabian and classic kitchen at Im Dorf 12, Sonnenbühl, inside the Romantik Hotel Hirsch on the Swabian Alb. The Michelin Guide listed the house with one star in 2026 for its high-quality cooking.
Chef Gerd Windhösel builds his menus around what the Alb produces. Alb lamb, Alb wagyu, Alb buffalo and organic vegetables from nearby growers all appear in his philosophy, which puts regionality and sustainability at the center. The menus change with the seasons, so the produce on the plate reflects what is available that month.
Der Feinschmecker, which named the kitchen the best regional cooking in Baden-Württemberg, cited dishes such as Seckach trout smoked over hot spices with pumpkin, einkorn and kernel oil. Duroc pork loin, charcoal grilled and served with a strong beer sauce, beetroot and three kinds of potato, shows the same local focus. Guests can choose a regional, a vegetarian or a gourmet menu.
The dining rooms follow an elegant country house style, with fresh colors, soft fabrics and tables dressed in white linen. Schlemmer Atlas awarded the restaurant two Kochlöffel for its sausage salad, homemade Maultaschen and roast beef with onions, served in a 19th-century wood-paneled room or the Deer Room. Outdoor seating and wheelchair access are also listed.
