Cooking from the lake and the hedgerow

The kitchen takes its cues from the Bistensee, the woods and the surrounding fields. Vegetables, fish and meat appear on the menu, combined plainly and shaped by northern German tradition. Everything is prepared by hand, without convenience products.

Guests often order the smoked Arctic char with parsley root and pear, or the duck leg with summer cabbage and currant jus. Burrata with cherry and basil also appears among the house favourites.

Rooms by the fire and on the water

The evening can begin at the fireplace or in the winter garden. Afterwards, guests can choose the main dining room, a private dining room, the lakeside terrace or one of six glass houses. The Schlemmer Atlas singled out the fireplace in winter and the large lake-view terrace, where a seven-course menu features trout, turbot and veal.
