The story
Gasthaus Hofmann, at Schindelsee 1 in Rauhenebrach, serves Country Cooking in Priesendorf and holds a Michelin Bib Gourmand for 2026, awarded for good-quality, good-value cooking. The inn occupies a former farm in a small village near Bamberg, and its seasonal kitchen draws on produce from nearby growers and hunters.
The kitchen changes its weekly à la carte card and its menus according to what each season brings. Bread comes from a bakery in Priesendorf, game from hunters across the Steigerwald, and the house smokes its own ham and processes its own fruit and nuts. The Schlemmer Atlas awards it 2.5 Kochlöffel and singles out quail, hare loin and curd dumplings. Kitchen leadership sits with Bettina Hofmann, who also trains apprentices in the house.
Recent menus have included quail with celery purée and Beluga lentils, and steinpilz and ricotta Maultaschen with spinach salad. Four-course menus run in two tracks, one built around meat and fish and one vegetarian. The two dining rooms are quiet, and the windproof terrace is set out for receptions and private events in warmer months.
