The story
Borst is a family-run restaurant with rooms at Luitpoldstraße 4 in Maßweiler, in the Pirmasens area, and it holds one Michelin Star (2026) for its Classic French cooking. The kitchen sits in a quiet village on the edge of the Palatinate Forest.
Harry Borst runs the kitchen with his son Max, who is listed as junior chef. Monika Borst is the host. Their French haute cuisine takes the great classics and reworks them with skill and some invention. Der Feinschmecker gives the house 3 and says the cooking keeps surprising with its refinement.
Foie gras comes with Sauternes jelly and pine nuts. Pan-fried sweetbread arrives with sautéed peas, and pork cheeks and ears are dressed in shallot vinaigrette. Venison loin also appears among the classics. Two menus are offered, and the daily menu follows the season.
Two modern dining rooms seat about 30 guests, so the evening stays personal. The wine list leans on the Palatinate, with bottles at every price level, and adds selections from growing regions abroad. The house also has a few hotel rooms, which suits a long dinner.
