The story
Hirschkönig is the gourmet restaurant of Romantik Hotel Hirschen, at Marktstraße 1a in Parsberg, Germany. Its seasonal kitchen earned a Michelin Recommended mention for 2026, and the menus draw on local farms, hunters and gardens.
Carola Hausen creates the dishes and also hosts guests at the hotel. The kitchen matures its own meat, makes its own sausages, and sources milk and eggs from a farm. Game comes from Upper Palatinate hunts, and vegetables from growers in the Knoblauchsland.
Menus are composed as a whole, so individual changes for allergies or intolerances are not possible. Guests with those needs can book a table in the Wirtsstuben instead, where the kitchen can adapt more flexibly.
Walls, tables and chairs are made of raw oak, which keeps the room warm and plain. A handcrafted oak table sits at the centre. The Schlemmer Atlas, which awarded three Kochlöffel for 2026, described handcrafted tables, mouth-blown glasses and excellent cooking in an atmosphere of natural freshness.
Few glasses crowd the table, so the view stays on the plate and on the person across from you.
The wine list draws on producers from across Europe and is chosen to pair with the multi-course menu. The restaurant also rotates a wine of the month and hosts seasonal events built around cheese, large wines and long afternoons at the table.
