The story
Victor's Fine Dining by Christian Bau holds three Michelin stars (2026) at Schloßstraße 27–29 in Palzem, Germany. The restaurant serves a seafood-led Japanese-French kitchen inside a Renaissance castle on the Upper Moselle.
Bau began as a classical French cook, but his style changed after several trips to Asia. He developed the "bau.stil," which pairs French haute cuisine with high-quality Japanese products. Seafood anchors the menu, often served raw or lightly cooked, and meat appears only as an optional supplement.
The tuna tartare with caviar and the king crab with Kyoto dashi are the plates most often cited for this approach. The seven-course Paris-Tokio menu moves from French technique toward Japanese flavors as the seasons change. Dessert is the bau.stein, with exotic fruit and yuzu ice cream.
The dining room sits in an intimate Renaissance castle, and host Thomas Blessing leads a team known for warm, understated attention. The wine list holds around 800 selections with a strong focus on the Mosel. Sommeliers Ester Eggert and Nina Mann pair wines with each course. Der Schlemmer Atlas also awarded the restaurant five Kochlöffel for 2026.
